Honey-Tangerine Marmalade
Do you have a tangerine tree in your backyard and right now have
loads of them? Make this marmalade to give as gifts for the holidays.
8 medium tangerines
1/8 teaspoon baking soda
4 tablespoons low or
no sugar fruit pectin
1/4 teaspoons unsalted butter
2 cups sugar
1 cup honey
Wash tangerines, remove rind in
quarters. Thinly slice rind lengthwise,
then roughly chop them crosswise
into smaller pieces. Transfer the rinds
into a large pot, add 2 cups water and
baking soda. Bring to medium boil,
cover, reduce heat to simmer until
rinds are soft, about 15 minutes.
Meanwhile coarsely chop tangerines,
removing all seeds.
Transfer to food processor, pulse
until pieces are broken but still
chunky, about 8 pulses. Add to pot.
Stir in butter and pectin. Bring to
boil. Add sugar and honey, return to
full rolling boil, stirring constantly.
Boil hard for 1 minute.
Remove pot from heat.
Skim foam with cold metal spoon.
Ladle into hot sterilized jars, process
in hot water bath for 10 minutes.
