Macadamia-Nut Honey
Want a great drizzle for a cheese platter?
This honey works with Parmesan or goat cheese.
• Makes 2 cups
1 cup macadamia
nuts, halves and whole
3/4 cup light local
honey
1/2 cup extra-virgin
olive oil
Kosher salt and freshly
ground black pepper
1 tablespoon fresh
rosemary leaves
1/4 teaspoon finely
grated lemon zest
1 green Hawaiian
chili pepper, to taste
Preheat oven to 300
degrees F. Spread
macadamia nuts on a
rimmed baking sheet.
Bake, stirring occasionally,
until lightly browned and
fragrant, about 10 minutes.
Coarsely chop, set aside.
Whisk honey and olive
oil in a medium bowl to
blend. Season to taste
with salt and pepper.
Fold in macadamia nuts,
rosemary, and lemon zest.
Add Hawaiian chili.
Divide between two
8-ounce jars. Cove and chill.
On gift card:
Drizzle over Parmesan
or goat cheese and
serve with crackers.
