Proprietor/Chef Nick Traxler opened his “rebel” restaurant in February 2016, creating an underground culinary destination for his friends and appreciators of world cuisine. As word spread about his unusual menu, the hideaway off Kaiwi Street in Kailua- Kona (next to Broke Da Mouth Grindz) now attracts 80-percent return customers, says Nick. “I’ve always wanted to lead a mutiny, and a pirate restaurant gives me a certain amount of leeway,” said Nick, whose unconventional restaurant philosophies are spelled out on the napkin dispensers at each table. “The wild game that we serve is more sustainable than most beef. It’s all grass fed and it’s heart healthy, too.
