Chef Ippy intends to create a family-style experience where locals and visitors can gather and experience a new twist on traditional local cooking. “This is an ohana-style restaurant,” he said. “We want everyone to walk in and feel like they are part of the family. On any given day, there will be at least one member of my own family working here along with me.” Having attended Hawaii Preparatory Academy in Waimea prior to pursuing culinary training at Le Cordon Bleu in San Francisco, Chef Ippy made a name for himself when he became a Season 8 finalist on TV’s Food Network Star, the youngest person to have been featured on the show. In 2012, he was named one of the “Best 30 Under 30” chefs by Forbes. Chef Ippy acquired his love for cooking while spending his early years at his father’s Hawaiian plate-lunch restaurant. He held his first executive chef position at his mother’s Italian restaurant, Solimene’s, also located in Waimea. Thanks to his deep roots in the community, Chef Ippy maintains close relationships with local farmers and fishermen, many of whom he knew through his parents. “I wanted to open a restaurant near where I am from,” he said. “Koa Table is a new direction for my restaurant. We’ve been here four years, and now it’s time to switch it up. It’s so much fun to try out different things.” Soon to be known as Koa Table, The Three Fat Pigs & The Thirsty Wolf, A Restaurant & Gastropub is open daily from 11 a.m. to 3 p.m. for lunch, and 5 p.m. to 9:30 p.m. for dinner.
