Blue Dragon chef Noah
Hester says the menu at the
popular Kawaihae restau-
rant is based on ingredients
harvested, fished or farmed
locally each week. Wheth-
er free-range chicken from
Puna Chicks Farm, freshly
caught ahi from local wa-
ters, or organic produce
grown in Hawi by the restau-
rant’s owners, the innovative
menu shows the flavors and
freshness of Hawaii Island.
“Every entree and ap-
petizer has at least one or
more items from local farm-
ers, ranchers or fishermen,”
said Noah, who also serves
as general manager of Blue
Dragon.
A native of Waimea, Noah
who grew up always know-
ing he wanted to be in the
kitchen. He worked the
local culinary scene for a
while (Cafe Pesto, Big Island
Steak House, Daniel Thie-
baut) and also worked in
Nashville before becoming
the Blue Dragon’s executive
chef when it opened in 2008.
Chef Noah says he enjoys
incorporating Hawaii’s clas-
sic flavors into the menu,like
the Kailua Pig Rice Ball made
with poi, or the tempura av-
ocado stuffed with spicy ahi
poke and mango vinaigrette.
The specials range from“fan-
cy” to down home; there’s
something for everybody.
“Blue Dragon is kid
friendly and it’s such a cool
location under the stars and
palm trees,” he said. “It’s a
totally different atmosphere
each night.”
