Developed by Executive Chef George Gomes and Senior Executive Sous Chef Michelle Gomez, the new menu debuts an array of stellar choices highlighted by melt-in-your-mouth flavors served with artisanal flair. From seafood, burgers, fish tacos and steak to salads and homemade desserts, the offerings are delicious, reasonably priced and generously portioned. Highly recommended, Rays Chopped Salad ($14) entices with local romaine, bay shrimp, cherry tomato slices, sweet onion, avocado and Big Island feta — all dressed with a tasty caper-mustard vinaigrette. The Hawaii “Naturally Raised” N.Y. Steak might be mistaken for filet mignon, it’s that tender and savory. A must-try on the appetizer list, the Kona Kampachi Sashimi serves up thinly sliced pieces of Keahole kampachi prepared to perfection with sea beans, ginger, serrano, shoyu and sizzling peanut oil. Sized for sharing, the Kalua Pork Potstickers are crispy and stuffed with succulent shredded pork. Rays regulars will be glad to know that old favorites are still on the menu, like the Fresh Troll Grilled Ahi, the always-popular Rays Burger, or the Ahi Poke Stack served with crispy won ton chips. Additionally, the revised wine list offers plenty of choices by the glass and bottle. Rays new signature cocktails are blended with muddled fruits and natural juices, served in glassware with tiki motifs.
