Located at the Kings’ Shop in Waikoloa Beach Resort, A-Bay’s is one of the only restaurants on the Kohala Coast open until midnight. The casual, gourmet restaurant and sports bar offers a late-night menu, live entertainment, a 24-tap digital beer tower, 10 TV screens, a Cruvinet wine preservation/dispensing system, and an innovative frost rail the spans the length of the cocktail bar to keep your drinks cool. For St Patrick’s Day, Executive Chef Darcy Ambrosio is preparing several Irish-themed dishes including corned beef and cooked cabbage. At the bar, the restaurant’s mixologists will be serving Irish-style libations, whisky-based cocktails, and beer and stout specials. “We will also be featuring special Irish entertainment on St. Patrick’s Day including Celtic dancers performing outside on our patio,” said Brian Flynn, co-owner of A-Bay’s Island Grill. Showcasing appetizers, entrées and desserts, Chef Darcy’s creative menu complements the restaurant’s impressive beer and wine programs. A veteran of the resort culinary scene on the Kohala Coast, Chef Darcy combines his love of Filipino flavors and Spanish influences with an appreciation of tapas-style dining and gourmet presentations. Prior to taking the helm at A-Bay’s, he served as executive chef at Ruth’s Chris Steak House at Mauna Lani. The restaurant’s 24-tap beer tower highlights local and domestic craft beers including Maui CocoNut Porter, Big Island Black Whole, Mehana Tsunami and Kona Big Wave. An in-house cicerone (beer sommelier) can advise on the perfect pairing with your meal. A-Bay’s comprehensive wine list features exceptional wines by the glass available through a state-of-theart wine preservation/dispensing system that allows customers to experience premium wines without having to purchase an entire bottle.
