One of the highlights of the wine list is the Volcanic Wine Program, which takes its inspiration from varietals grown in volcanic soil regions around the world. These volcanic selections pair wonderfully with the delicious entrées and appetizers at the bayfront restaurant overlooking Keauhou Bay, says Keith Mallini, general manager of Rays on the Bay and creator of the Volcanic Wine Program. “Being surround by the black lava here on the Kona Coast was the inspiration for us to bring in varietals from volcanic soil regions,” said Keith. “Some of these regions produce the most amazing wines on the planet, and we are proud to offer such a great selection here at Rays on the Bay.” From the slopes of Mt. Etna in Sicily, the Planeta Chardonnay 2013 unveils aromas of peach, golden apple, white figs, vanilla cream and meringue. Another volcanic wine, the Failla Chardonnay 2011 hails from Hayne Vineyard in St. Helena, California, in the shadow of Mt. George. Of the lighter reds selections, the Château de Pierreux Brouilly 2013 comes from Beaujolais, France, while the Alexana Pinot Noir 2011 is from Dundee Hills, Oregon. Grown on the slopes of Mount Vesuvius, Feudi San Gregoria Falanghina 2013 reveals hints of apple, banana and pineapple, and a lingering finish of citrus. The Domain Sigalas Assyrtiko 2013 comes from the volcanic region of Santorini, Greece. Continued on page 2
