The latest bounty of
culinary offerings is being
served with artisan flair at
Privateer’s Cove, the eclectic
Kailua-Kona restaurant
that defines adventures
in dining.
Open six days a week
for dinner 4 p.m. to 10
p.m., Privateer’s Cove
puts the spotlight on
specialty dishes like Axis
deer or Muscovy duck
breast. Proprietor Nick
Traxler changes up the
menu quite frequently
based on what specialty
meats are available at the
moment.
“We are focused on
dinner, expanding our
offerings slightly with a
brand new menu coming
out every single week,”
said Nick. “Mike, Josh
and myself are cooking up
many new things.”
Currently the rack
of lamb from South
Australia is cooked rare to
medium-rare, marinated
in anise orange marinade
and served over orzo.
Prepared in a cast-iron
skillet, the duck breast
from Canada is topped
with a whiskey berry compote
and served with garlic
parmesan orzo.
