cuisine of Chef Edwin Goto

Whether soups, salads, ramen,
saimin, meat dishes or desserts,
the gourmet offerings of Noodle
Club in Waimea reveal the culinary
prowess and creativity of
Chef Edwin Goto.
Located at Parker Ranch Center,
Noodle Club presents a fun, family
friendly setting that also pays
homage to Chef Goto’s collection
of Star Wars figurines, superhero
characters and Japanese toys.
Outfitted with reclaimed lumber
from an old Parker Ranch barn,
the venue’s interiors provide a
colorful backdrop for patrons to
savor the many homemade menu
items and daily specials prepared
by Chef Goto.
Simmering overnight to bring
out the inherent flavors, all stocks
are made from scratch daily. The
beef broth used in the Seoul Bowl
stock, for example, blends grassraised
beef short ribs with leeks
and local Korean daikon — all
simmered for 36 hours to produce
the rich, savory flavor. The
Saimin broth incorporates pork
bones along with dried opelu,
shiitake mushrooms and konbu,
while the beef pho combines ginger,
garlic, onions, five spice, cinnamon,
coriander and licorice.
Even though the regular menu is
tantalizing unto itself, Chef Goto’s
daily specials always dazzle. The
garlic-roasted whole Dungeness
crab showcases fresh crab raised
at the Natural Energy Lab of
Hawaii Authority in Kailua-Kona.
Other specials that might make
an appearance on any given day
include the steamed whole snapper
(prepared with garlic, hot oil,
ginger and smoked shoyu), the
crispy whole New Zealand tai
snapper served with ponzu sauce,
or the salmon donburi seasoned
with scallions, ikura and shiitake
mushrooms.
