One of the most popular Noodle Club mainstays, the Club Saimin, blends wheat egg noodles and homemade char siu with eggs, green onion and fish cake. Chef Goto’s innovative take on this classic Hawaiian plantation-era dish is enhanced by the rich and savory flavor of his homemade broth. On a cool Waimea day, the Club Saimin is akin to “Hawaii in a Bowl,” the ultimate comfort food for local patrons and visitors alike. For all of his impressive creations, Chef Goto derives his inspiration from the abundance of fresh ingredients sourced from local purveyors. The green onions, for example, come from Early Farm in Waimea, while the eggs are fresh from Hawaii, and the Amano fish cake is made in Hilo. Top-quality noodles come from one of the premier noodle house in the country: Sun Noodles in Honolulu. Whether soups, salads, ramen, or meat dishes, the eclectic offerings of The Noodle Club are creative, flavorful and beautifully plated. Chef Goto handmakes most all of the menu items in-house. All stocks are made from scratch daily, simmering overnight to bring out the enhanced flavors. “The beef bones we use for our Seoul Bowl are simmered for 36 hours along with grass-raised beef short ribs, leeks and local Korean daikon,” said Chef Goto. “For our saimin broth, we simmer pork bones for 24 hours along with dried opelu, shiitake mushrooms and konbu.
