The menu sets itself apart with its homemade sauces and broths, said Ben, who notes that broth is cooked overnight for at least 12 hours. “Everything is made to order,” he said. “We pride ourselves on our fresh ingredients. We are supporting the local community and are ordering much of our produce from purveyors on the Big Island. We obtain our noodles from Sun Noodles, the premier Japanese noodle company on Oahu.” The family-friendly restaurant also offers an extensive keiki menu that includes ramen dishes, chicken or shrimp katsu plates, calamari curry, mochiko chicken and more. “We are all about family at Daiichi Ramen,” said Ben. “Nothing come before family for us.
