Your Foodie Guide t to great eating in West Hawaii ONO-LICIOUS!March 10, 2017 Noodle Club features fun gourmet dining at Parker Ranch Center in Waimea Chef/owner Edwin Goto is a veteran of the Hawaii culinary scene One of the most popular eateries in Waimea, Noodle Club has created quite a buzz since its grand opening in late 2015. Opened by veteran resort chef Edwin Goto, Noodle Club attracts visitors and locals alike for its gourmet noodle dishes, appetizers and soups made with top-quality, local ingredients. According to Chef Goto, one of the most popular menu items is the Bowl of Seoul, a kimchi-inspired dish featuring braised beef brisket, leek, daikon and more. The Pork Belly Bao Bun is another must-try, served with pickled vegetables or roasted Hamakua oyster mushrooms. The Big Pho King Bone blends broth and beef bone marrow with greens and sweet onion. “All of our soups we make from scratch, such as our pork stock, beef stock and vegetable stock,” said Chef Goto. “It’s labor intensive but the final product is well worth it. Most all of our ingredients are from the Big Island and the state of Hawaii. There is so much good product here. We purchase really good noodles from Honolulu.” A veteran of the Hawaii resort industry, Chef Goto has experienced a stellar career through the decades, beginning in 1983 at Halekulani’s La Mer restaurant, in Waikiki, where he worked for five years. After a five-year stint at upscale restaurants in San Francisco, he served as a sous chef at two resorts on Lanai: The Lodge at Koele, and the Manele Bay Resort. He then moved to the Big Island and oversaw the kitchen at the Mauna Lani Bay Hotel & Bungalows for almost seven years. Foodies on the Big Island will recognize Chef Goto’s first freestanding eatery, Village Burger, an acclaimed gourmet burger diner he opened seven years ago at Parker Ranch Center.
