Our gourmet-style steakhouse burger features grassfed beef from Waimea that’s antibiotic free, for example. Our light and crispy chicken wings are soaked in Hawaiian chilipepper brine and tossed in seasoned, unbleached flour for a nice crunch and no sticky fingers.” According to Jeff, the biggest seller so far is the chicken Marsala stuffed with manchego cheese, rosemary and prosciutto, pan-seared with Hamakua Alii mushrooms. Another favorite, the whipped goat cheese bruschetta takes top billing on the impressive appetizer menu. Showcasing Hawaiian plantation /farmhouse interiors, the second-story venue includes a custombuilt mango cocktail bar and wine racks, a barn-door entrance, stone-tiled floors covered in shiny grey epoxy, oak tables, cushioned wooden chairs and a designer color scheme. Local clothing designer and graphic designer Justin Dryer, proprietor of the Lele brand, assisted in realizing the thematic direction of the venue including the look of the bar. Speaking of cocktails, popular Kona bartender Michael Jensen developed a proprietary roster of metropolitan beverages unlike anything available in Kailua-Kona. Drinks are handcrafted with fresh juice, handmade syrups and no added preservatives. Another well-known bartender in Kona, Ronnie Velveta, of the Infamous Bourbon Boys, takes the helm at the Foster’s Kitchen cocktail bar. Nightly musical entertainers include Johnny Shot, Pancho Man, Bruddah Matt and more. Happy employees make for happy customers, says Jeff. “Our goal is to take care of our employees so that they take good care of our customers.
