Place hot rice in a non-metal container. Sprinkle with seasoned vinegar and fold into rice. 2. Soak shiitake mushrooms in water for an hour. Squeeze out excess water and remove stems. Slice into strips and cook for 8 to 10 minutes on medium heat with  ½ cup water, 3 Tbsp. sugar, 2 Tbsp. mirin,  ½ tsp. salt and 2 Tbsp. soy sauce. 3. Place nori on a sushi mat, spread rice over ⅔ of the nori and flatten it out to the corners. Arrange the filling ingredients across the rice, about an inch away from the edge nearest you. Using the mat, roll sushi away from you, keeping ingredients in place with your fingers. Gently roll again. Let rest for a few minutes, then cut into pieces and serve. Makes 7-10 rolls.
