In a medium pot, bring water to a rolling boil and cook udon for approximately 12 minutes or until tender. Drain and rinse in cold water. 3. Next, make the udon soup. In a separate pot, combine water and soup  base over medium-high heat. 4. Add the soy sauce and mirin. Bring to a boil. Adjust broth to taste. 5. Transfer udon to serving bowls.
