Melt butter over medium heat: 1 stick butter In a large bowl, measure: 1 3/4 cups sugar (some recipes call for as much as 4 cups sugar. Add more if you want it sweeter) 4 beaten eggs Mix well. Add slowly, stirring constantly: 1 1/2 cups lilikoi juice On medium heat, add to melted butter, cook until foam dissappears, about 5-10 minutes. Pour into sterilized jars and seal. On the label, state that the lilikoi butter should be refrigerated after opening. Amaretto In a medium pan, boil together until sugar is dissolved: 1 cup water 1 cup sugar Remove from heat and add: 2 cups vodka 2 tablespoons almond extract 2 teaspoons vanilla extract Store in sterilized bottles. When you make the amaretto, it is clear, but as it ages, it will develop a nice light brown color.
