A: We are the only food truck in Hilo, if not the island, that serves casual and fine dining food out of a food truck. It is my goal to make sure every customer that comes to my truck has an excellent experience, that is why we say, “At Restaurant Production Grindz, every plate matters.” Q: Do you have any specials going on? A: Yes, our specials change daily and it varies with an array of different cuisines from fried sushi to pasta dishes, even prime rib or ribeye steaks on Fridays. I usually will post specials the night before on Instagram. Q: Did you go to culinary school? A: I did not. I learned and started working in kitchens from 1987 as a dishwasher and worked my way through the ranks. My schooling was working in some of Waikiki’s busiest eateries like Tahitian Lanai, Matteo’s, Moose McGillycuddy’s and Auntie Pasto’s, to name a few. I really enjoy and love what I do and every plate that comes out of my truck is an expression of myself. I take that responsibility seriously.
