A: As far as entrées, we’ve introduced the opakapaka to the à la carte dinner menu. This fish is served steamed with lup cheong, ginger, cilantro, green onion, shoyu and peanut oil over a bed of fresh bean sprouts and watercress. We’ve also added a new appetizer: locally sourced Kauai shrimp, which are served crispy and head-on style, with a side of habanero-Fuji apple dip. Q: How will the Hilo Hawaiian Hotel celebrate the holidays during the month of December? A: Each year, during December, we offer additional holiday buffets on Wednesdays and Thursdays. The holiday buffet features the all-time favorite steamed snow crab as well as a salad bar, seafood bar, pasta bar, “hot items” section, a dessert bar and includes house beverages. This year, on top of our regular Christmas Eve dinner, Christmas Day brunch and dinner, we are adding a Christmas Eve brunch buffet on Dec. 24.
